Underwriting with Empathy, Experience, and Edge From powerlifters to playwrights, technologists to traditionalists, Rainbow’s Underwriter team brings a striking mix of skills to the table—but they share one thing in common: a genuine passion for helping hospitality operators succeed.
Adrien Kemper – Staff Underwriter | Fall River, MA Adrien’s path from theatre and literature to underwriting is anything but conventional—but it’s that blend of creativity and analysis that makes him such a force at Rainbow. Raised in a hospitality family in Michigan, he brings a natural understanding of service and operations to every underwriting decision.
Now a Staff Underwriter, Adrien focuses heavily on process management and continuous improvement across the underwriting function—ensuring our systems evolve alongside the fast-moving businesses we serve.

From leading our renewals process to refining workflows with engineering, Adrien is building the kind of underwriting infrastructure that scales with both empathy and efficiency. (Also: ask him about LARP writing. Seriously.)
Andrew Clark – EVP of Underwriting | Richboro, PA Andrew is the engine room of the Underwriting team—literally. A former U.S. Navy submarine officer with a background in nuclear engineering, Andrew combines precision, discipline, and a competitive edge (ask about his strongman training).

With over a decade of experience and multiple industry designations, he ensures our underwriting practice is fast, fair, and always evolving alongside the operators we serve.
Bill Deemer – Head of Insurance | Grand Rapids, MI Bill serves as Rainbow’s Head of Insurance, bringing over 20 years of commercial insurance experience and a deep commitment to building systems that balance innovation with underwriting discipline.
He has worked across nearly every part of the industry, including agency, claims, underwriting, and product development. This full-spectrum perspective allows him to lead with clarity and foster a culture of collaboration and continuous improvement within the underwriting team.

Bill earned his degree in insurance from the University of Olivet and holds multiple professional designations including CIC, CRM, AAI, and AU. Based in Grand Rapids, Michigan, he continues to drive Rainbow’s insurance strategy forward with focus and purpose.
Emily Stones – Underwriter | Bozeman, MT As the newest member of Rainbow’s underwriting team, Emily brings over a decade of experience with a sharp focus on hospitality underwriting and agent relationships. Known for her calm under pressure and clear communication style, she’s already made her mark as a dependable, steady hand in fast-moving moments.
Emily is passionate about helping agents succeed—offering thoughtful, timely support that builds lasting partnerships.
“In a fast-paced environment, consistency matters. I aim to be a steady, supportive partner that agents can rely on.”
Outside of work, she leans into her creative side as a certified yoga instructor and budding herbalist. Now based in Bozeman, Montana, she’s enjoying mountain life and spending time outdoors whenever she can.
Felicity Kidd – Underwriter | Seattle, WA With nine months under her belt, Felicity is already a cornerstone of Rainbow’s Western region growth. She’s passionate about building long-term relationships with independent agents and diving deep into Rainbow’s evolving product landscape.
Her greatest pride? “Gaining deep product knowledge and helping Rainbow grow its business insurance book.”
Felicity will be taking on even more of a role leading the process on underwriting large schedules of restaurants.
Kim Vernick – Underwriter | Aston, PA With over 13 years in the insurance industry, Kim brings discipline, precision, and purpose to every policy she touches. Before underwriting, she served as a crew chief on AH-64D Apache helicopters in the U.S. Army—an experience that shaped her strong work ethic and deep commitment to teamwork.
After several years underwriting restaurants, she joined Rainbow six months ago and immediately felt at home.
“I’m proud to be part of this rock-solid underwriting crew,” Kim says. “It’s a team that truly has each other’s backs.”
Nipon Samad – Underwriter | Sayreville, NJ A first-generation American born to a Bangladeshi family steeped in academic excellence, Nipon brings passion and innovation to everything he touches—from underwriting strategy to Rainbow's AI adoption.
“I’m proud that we’re applying machine learning in a meaningful way—driving innovation and efficiency.”
When he's not shaping smarter systems, Nipon is likely catching a Brooklyn Nets game or imagining his grandfather coaching Kobe courtside
